Cookies and Cream Cookies

Cookies and Cream Cookies

I don’t like Oreos, but I love the Oreo flavor in baked goods, when they’re made correctly. Shelby and I have tried several Oreo recipes before, but we’ve never really had an amazing one, until these. These cookies are soft, chewy, and bursting with cookies and cream flavor. I think the cream cheese in these cookies is a huge contributor to both the texture and the taste. Shelby made the smart call to make the cookies small, which made eating about ten of them less of a hit to my waistline.

Cookies and Cream Cookies

from Vanilla Sugar Blog

Ingredients

2 cups + 2 tbsp all-purpose flour

1/2 tsp baking soda

1/2 tsp salt

12 tbsp (1 1/2 sticks) unsalted butter

8 oz cream cheese, softened

1 cup brown sugar, not packed

1/2 cup sugar

1 tsp vanilla extract

2 cups crushed Oreo cookies, not too fine but not large chunks either

Directions

Mix together the flour, baking soda, and salt.

Cream together the cream cheese and butter in a stand mixer (or by hand) until smooth. Add in both sugars and vanilla extract and beat until combined.

Add the dry ingredients and mix slowly until just combined. Add in crushed Oreos and mix by hand.

Cover the dough and chill for at least two hours.

Preheat oven to 350˚. Roll small balls of dough (we did about 1 1/2 to 2 tsp sized balls) and place on a baking sheet. Bake for 9-11 minutes.

Makes about 4 dozen cookies.

Enjoy!

How cool are these fold-out cooling racks? I wish I had some, but I can’t find them online.
