Lightened Pumpkin Spice Bars

Hello Los Angeles! Back to work and back to school for me. But the pumpkin recipes prevail! I still have a couple more from my break at home, so here we go. These Lightened Pumpkin Spice Bars from Sallys Baking Addiction don’t taste lightened to me. They have a texture reminiscent of a moist, fluffy quickbread, but a little more gooey on the inside. Pumpkin flavor shines through in this recipe, accentuated with plenty of spices. If you enjoy pumpkin bread, you will enjoy these pumpkin spice bars.

The lightened part of these bars is the use of whole wheat flour, fat-free milk, and light butter. Half the flour is whole wheat, but I don’t taste it at all, so I would be curious to see if using all whole wheat flour would make it taste too healthy. The use of light butter gives these bars their bread-like crumb, since light butter is basically just butter and vegetable oil, and vegetable oil is often used in quickbreads. In any case, Sally did a fantastic job lightening up these bars!
