Pumpkin Molasses Bars

Happy Friday everyone! UCLA Women’s Volleyball had a great win over OSU tonight, so in celebration I’m writing this post! I made these bars a couple weeks ago, combining two of my favorite fall flavors, pumpkin and molasses. I made up this recipe based on the amount of ingredients I had on hand, and it turned out fantastic! The molasses provides a rich, sweet flavor, while the pumpkin and spices give it that classic fall pumpkin taste. These bars are perfect just barely baked through, so they are still nice and gooey. Pumpkin Molasses Bars

Ingredients

2 1/2 cups all-purpose flour

1 tsp baking soda

1 tsp baking powder

1 tsp salt

2 tbsp pumpkin pie spice

1/2 cup (1 stick) unsalted butter or margarine, softened

1/4 cup vegetable oil

1 cup granulated sugar

1/2 cup brown sugar

1 egg

1 tsp vanilla extract

1/4 cup unsulphured molasses

1 cup pumpkin puree

1 cup chocolate chips

Directions

Preheat the oven to 350˚F and grease a 9×13 pan.

Sift together the flour, baking soda, baking powder, salt, and spices. Cream together the butter, oil, and sugars. Beat in the egg, vanilla, molasses, and pumpkin. Add the dry ingredients to the wet and stir until combined. Stir in the chocolate chips.

Bake for 25-30 minutes, until just set and a toothpick comes out with a few moist crumbs. Allow to cool before cutting. Enjoy!
