Pasta with Sweet Potato Cauliflower Sauce

It’s Friday! That means it’s time to kick off the weekend with a recipe!

Remember that spaghetti squash with creamy cauliflower sauce I made a while back? Well, it was delicious. I decided to change the sauce a bit, sweetening it with some sweet potato, while still adding cheese to maintain a savory taste. I tossed in some roasted broccoli, because it’s delicious, veggie chicken, my favorite veggie protein at the moment, and some caramelized onions, and it was a meal! This was a delicious dinner entree, and I enjoyed the leftovers all week for lunch. Here’s the recipe!

Pasta with Cauliflower Sweet Potato Sauce, Broccoli, and Veggie Chicken

Makes 6 servings

Ingredients

6 oz pasta of choice (I used veggie rotini)

Olive oil

1 head broccoli, chopped into florets

1/2 head cauliflower, broken into florets

1 medium sweet potato

2 tbsp chopped garlic

1/2 onion, sliced

1 1/2 cups skim milk, more as needed for thinner sauce

1 package Trader Joe’s Veggie Chicken Strips (or veggie meat of your choice), chopped

1/2 cup Parmesan cheese, or Parmesan blend, plus more for garnish

Directions

Preheat the oven to 400˚F. Toss the broccoli in olive oil and spread on a baking sheet. Toss the cauliflower in olive oil and spread on a separate baking sheet. Roast for 20-30 minutes, until tender.

In a saucepan over medium heat, heat the olive oil, then add in the garlic and onions. Cook, stirring occasionally, until the onions are brown and caramelized, about 20-30 minutes. Meanwhile, cook the pasta according to package directions, then drain. Toss with broccoli and veggie chicken.

Meanwhile, poke several holes in the sweet potato with a fork, and microwave at full power for 7-9 minutes, depending on your microwave power, stopping halfway to flip the sweet potato. Set aside to cool, then scrape out the flesh into a food processor. Once the cauliflower is cooked, cool slightly, then add to the food processor. Process until relatively smooth, then add the milk and process until creamy and smooth. Add more milk for a thinner sauce. Add the sauce to the saucepan with the onions, and heat through. Add the cheese blend and stir until melted in. Add the pasta, broccoli, and veggie chicken and toss to combine. Serve warm, garnished with Parmesan cheese. Enjoy!
